The Perfect Pour

Our approach to brewing beautiful filter coffee.

Start with what is in the cup

Good coffee is rarely about one trick. A good pour comes down to a handful of small decisions made with care: fresh beans, clean water, a sensible recipe and the patience to taste what you made.

We keep our approach simple at the bar and we suggest the same at home. Change one thing at a time, write down what happened, and trust your own palate over any rulebook.

What we pay attention to

Freshness first. Coffee is at its best between one and four weeks after roasting, and it fades quickly once ground. Grind just before you brew and store beans somewhere cool and dark.

Then ratio and time. A scale and a timer do more for consistency than any expensive machine. Once the numbers repeat, the flavors do too.

Make it yours

Recipes are a starting point, not a verdict. If a cup tastes sharp, grind a little finer. If it tastes heavy, go coarser. Slow down, take a sip, and adjust from there.
